Period Power Bites – PMS Support in Every Bite

Nutrient-packed and delicious, these bites taste just like candy, making them the perfect indulgence during your cycle. Ingredients
1 cup raw pumpkin seeds (pepitas)
1 cup walnuts
2 tsp dried culinary lavender
1/2 tsp fine grain sea salt
1 tbsp vanilla extract
16 Medjool dates, pitted
2 cups chopped organic dark chocolate, preferably 85% or higher
1 square cacao butter or coconut oil (I used coconut oil)
Optional: Add roses to the paste and top with lavender, butterfly pea flower, roses, and calendula
Method
Slit dates halfway through with a knife to remove the stone, being careful not to cut them in half.
Blend pumpkin seeds, walnuts, lavender, sea salt, and vanilla extract in a food processor until a nut butter consistency forms.
Stuff the pitted dates with the nut butter paste.
Place the stuffed dates in the freezer for 10-15 minutes.
Melt the chocolate and coconut oil (or cacao butter) in a double boiler.
Coat the slightly frozen stuffed dates in the melted chocolate, then place them on a parchment-lined baking sheet. Top with herbs (if using) and a sprinkle of flaky sea salt.
Freeze for 1 hour, then transfer the bites to freezer-safe bags for storage.
